Mini Banana Bread Muffins

Banana bread is a thing of the past, we better make sweet mini muffins out of it! These muffins do not contain any added sugar. Only the banana sweetens these muffins.

Topped with some peanut butter (I prefer to use the peanut butter from Manilife*) these Mini Mufifns taste like a "sin", but they are no sin at all, because only healthy ingredients are used. The chocolate and almonds give it the perfect chocolaty and nutty touch.

Sure, you can just bake a banana bread out of it, but I think these muffins have that certain something in contrast to bread. They are small, sweet, chocolaty and great for a healthy start into the day. If you prefer, you can also make a gluten-free version by simply using gluten-free oatmeal.

You think there's only banana bread in bulk? You thought wrong. These sweet mini banana bread cupcakes are the perfect snack to go. They are pleasantly filling and taste simply heavenly with a little nutbutter on top, and they are completely sugar-free. Because of the chocolate and cocoa they are deliciously chocolaty, but still no "sin", because we really only use very little of. You should definitely try it!

Duration 15 + 25 minutes
Ingredients for 6 muffins
  • 70g oatmeal¹
  • 70g (grounded) almonds
  • 1 large banana (here 140g)
  • 100g almond drink
  • 1 teaspoon baking powder
  • 15g cocoa powder
  • 10g plantbased oil (here: sunflower oil)
  • 20g chocolate chips dark, vegan
  • 1 pinch of cinnamon
Preparation
  1. preheat oven at 180°C circulating air
  2. grind oats and almonds into flour in a food processor
  3. add the remaining ingredients, but keep 5g of the chocolate chips
  4. fill into muffin cups and top with the remaining 5g chocolate chips
  5. bake for about 25 minutes in the oven on the middle shelf
Remarks
¹ If necessary, use gluten-free oat flakes.
