Today I would like to present you a recipe for a delicious vegan caramel-vanilla rice pudding that is really quickly made and can be eaten as breakfast, as a main course, as a dessert or as all together. Basically it is not much different from "normal" rice pudding, only the coconut blossom sugar and vanilla extract give it the perfect caramel note.

By the way, coconut blossom sugar is a super alternative to refined sugar. Although it does not have fewer calories, its low glycemic index means that the blood sugar level rises much more slowly and is therefore more easily metabolized by the body. Since oat milk has a slightly sweet note anyway, it is ideal for preparation. Alternatively, you could also use rice milk, which is just as suitable.

I personally have to admit that I even like rice pudding with plant milk much more than with cow's milk. In my opinion, it becomes much creamier and also a little sweeter. I really can only recommend it to you! I like to eat it for breakfast at work and prepare it the day before, because rice pudding tastes great cold too.
