Caramel Vanilla Rice Pudding

This recipe is really versatile, as rice pudding can be eaten as breakfast, dessert, main course, brunch or directly with everything else. The vegan milk alternative and the coconut blossom sugar make it wonderfully sweet and caramel-like.

Duration 60 minutes
Ingredients for 2 portions
  • 125g rice pudding
  • 600g oat drink
  • 25g coconut blossom sugar¹
  • 5ml vanilla extract or pulp of a vanilla pod
  • 1 pinch of salt
  • optional: cinnamon
  • 150g sour cherries frozen
Preparation
  1. wash rice pudding well
  2. put oat drink, coconut blossom sugar, vanilla extract, salt and rice pudding in a pot and stir well
  3. cook at low heat for 20-25 minutes and stir again and again so that nothing burns
  4. remove from the hot plate and let it swell for another 15 minutes, if necessary, until the rice pudding is as soft as you like
  5. heat the cherries in the microwave or pot and pour over the rice pudding, ready
Remarks
¹ If you like it a little sweeter, you should use a little more sugar.
