Chocolate Cake (sugar free & healthy)

When I go to a café or restaurant and I have to choose between a fruity or a chocolate cake, my choice always goes to the chocolate cake. All the more I am happy that it is truly a chocolate bomb, like this vegan chocolate cake. And by bomb I don't mean it's a calorie bomb, this one is rather the healthy version of a chocolate cake, which it gets by with just 233 kcal per piece. It is really nice juicy and also goes down well with non-vegans.

Especially in the Gugelhupform this cake looks simply stunningly beautiful, doesn't it? Just looking at my mouth is watering.

What I personally like most about this cake is the combination of coconut and chocolate. Since this cake is prepared with coconut oil, it brings a fine note. However, if you don't like it that much, you can also replace the coconut oil with sunflower oil, as this is tasteless. And if you like, you can add a little bit of vanilla flavour, for example. There are no limits to your imagination!

I leave the cake in the oven for about 50-60 minutes. I prefer to set the heat a little lower (here 160°C circulating air) so that it doesn't burn me from above, and I still test it again with a stick just before taking it out to make sure it's ready. I had my problems with this during my first (vegan) baking attempts. Who knows it?

This chocolate cake does not contain any white sugar and tastes wonderfully juicy and super chocolaty! For me there is no better chocolate cake than this one, this one is really chocolate overload. So if you don't like chocolate too much, this cake is probably not for you - but never mind, more for us. You can make it in a Gugelhupform like on the photo or in a 28cm springform pan (it will be a bit flatter then).

Duration 20 + 50 minutes
Ingredients for 19 pieces
Dry ingredients:
  • 200g oat flakes¹
  • 100g ground almonds
  • 80g baking cocoa
  • 1 package baking powder
  • 1 pinch of salt
  • 50g dark chocolate drops vegan (optional)
Liquid ingredients:
  • 140g coconut oil²
  • 240g plant drink
  • 200g apple pulp
  • 170g liquid sweetener (agave syrup, maple syrup etc.)
For the glaze:
  • 100g vegan dark chocolate, min. 70%³
  • shredded coconut, chopped nuts or flowers
Preparation
  1. preheat the oven to 160°C circulating air, grease the baking tin and line the bottom with baking paper if necessary (for springform pan)
  2. grind the oat flakes into flour in a kitchen machine/mixer
  3. add ground almonds, cocoa powder, baking powder, salt and mix
  4. heat coconut oil in a pot until it is completely liquid, add plant drink, apple pulp, sweetener
  5. mix dry ingredients with liquid ones and add chocolate drops
  6. put the dough into the prepared form and bake the cake in the oven for about 50-60 minutes, test with stick
  7. allow the cake to cool, melt the chocolate in a water bath and pour over the cake
  8. let it cool down a little and pour the rest of the decoration over it
Remarks
¹ If necessary, use gluten-free oat flakes.
² If you prefer the cake with less coconut flavour, I recommend sunflower oil, as it is neutral in taste.
³ If you don't pay much attention to the calories, you can use a little more chocolate for the glaze.
