Curries have the great advantage that they are often very quick to prepare and always taste good. In my opinion the Indian cuisine is a very special one anyway, so I would not like to withhold this Mango Coconut Curry with Chickpeas from you.

The first time I ate this combination in an Indian restaurant I was completely swept off my feet. At first I thought that the combination of mango, coconut and chickpeas did not sound very tasty, but I wanted to try it anyway. And it was worth it! Since then we have this dish all the time when we really need something to eat quickly. Especially since I have these ingredients almost always at home in the pantry and the freezer.

This dish is also great for Meal Prep as you can prepare it quickly and it will keep for several days in the fridge. You could of course also freeze part of it and defrost it as needed.
