Help! You forgot that you're supposed to bring a noodle salad to a barbecue with friends? Then this vegan salad is your savior in distress. It's made within 10 minutes and tastes super delicious. It's almost like you guys worked really hard on it. All you have to do is throw a few ingredients into a bowl and you'll have a great vegan noodle salad in no time. And promise, this salad is really foolproof!

The cat in the salad is optional, by the way. Kidding! She just loved the salad as much as I did. That's why I didn't want to keep it from you guys.

The most delicious part of this pasta salad is the roasted pine nuts. And believe me, the roasting step is really important. Only then the pine nuts become really aromatic and give the salad that extra kick.

Instead of wholemeal pasta, you can of course also use normal wheat pasta for this recipe. The salad tastes at least as good with this. I just like to use wholemeal noodles because they are made from the whole wheat or spelt grain and therefore contain more nutrients. They also keep you full longer. By the way, the tofu provides you with an extra portion of protein.

You can also make your own Pesto Rosso. Simply mix cashews, yeast flakes, dried tomatoes in oil, herbs and spices until you like the consistency and taste.

Duration 10 minutes
Ingredients for 4 medium or 3 large portions
  • 300g wholemeal pasta¹
  • 150g arugula
  • 200g smoked tofu
  • 1 glass of Pesto Rosso vegan
  • 2 medium-sized tomatoes
  • 1 paprika
  • 20g pine nuts
  • Salt, cayenne pepper
Preparation
  1. cook the pasta according to the instructions on the package and leave to cool slightly
  2. roast the pine nuts in a pan on a low heat
  3. wash and chop the arugula
  4. wash and chop the pepper and tomato and dice the smoked tofu
  5. put the pasta in a bowl, mix with pesto, salt and cayenne pepper
  6. add vegetables, salad, smoked tofu and pine nuts, ready
Remarks
¹ Alternatively you can use normal wheat pasta. I have written more detailed information about this in the blog post above.
