Help! You forgot that you're supposed to bring a noodle salad to a barbecue with friends? Then this vegan salad is your savior in distress. It's made within 10 minutes and tastes super delicious. It's almost like you guys worked really hard on it. All you have to do is throw a few ingredients into a bowl and you'll have a great vegan noodle salad in no time.

Duration 10 minutes
Ingredients for 4 medium or 3 large portions
  • 300g wholemeal pasta¹
  • 150g arugula
  • 200g smoked tofu
  • 1 glass of Pesto Rosso vegan
  • 2 medium-sized tomatoes
  • 1 paprika
  • 20g pine nuts
  • Salt, cayenne pepper
Preparation
  1. cook the pasta according to the instructions on the package and leave to cool slightly
  2. roast the pine nuts in a pan on a low heat
  3. wash and chop the arugula
  4. wash and chop the pepper and tomato and dice the smoked tofu
  5. put the pasta in a bowl, mix with pesto, salt and cayenne pepper
  6. add vegetables, salad, smoked tofu and pine nuts, ready
Remarks
¹ Alternatively you can use normal wheat pasta. I have written more detailed information about this in the blog post above.
