Tsatsiki (vegan)

Vegan Tsatsiki tastes at least as good as the original! But all ingredients are exclusively vegetable. Instead of Greek yoghurt we use soy yoghurt. This Tsatsiki tastes wonderfully garlicky and reminds of a visit in a restaurant in Greece at the coast at sunset... You can easily get this feeling at home. Whether for a barbecue party, a picnic with friends in the park or whatever. This recipe will make your day better, I promise! All the ingredients you need for this recipe can be found here:

And it doesn't even take 10 minutes. However, the Tsatsiki only becomes really tasty if you let it steep for a night or at least a few hours. That's not absolutely necessary, but it makes the taste more intense and the ingredients can combine really well. It is also important that you press the liquid out of the cucumber or let it drip off so that the Tsatsiki does not become too liquid. You could also use a vegan quark alternative instead of soy yoghurt, then it will be even creamier.

Ingredients for 3 portions
  • 250g soy yoghurt (sugarfree at best)
  • 200g cucumber
  • 1 tablespoon of olive oil
  • 1 large or 2 small clove(s) of garlic
  • 1 squirt of lemon juice
  • optional: fresh parsley or fresh dill chopped
  • ground salt, pepper, cumin (cumin)
Preparation
  1. grate the cucumber and either wrap it in a cotton cloth and press out the water or put it in a sieve and let it drain a little
  2. put soy yoghurt in a bowl
  3. press or chop the garlic clove and add to the soy yoghurt
  4. add salt, pepper, lemon juice, herbs and drained cucumber
  5. stir and let it stand for a while, at best prepare it the day before and let it stand covered in the refrigerator
