Fruity Vanilla Balls

You are looking for a healthy vegan snack for in between? Which is sugar-free and simply delicious? And tastes like a healthy chocolate? Then you've come to the right place! These fruity vanilla balls are very quickly made and super delicious, I promise.

And let's face it, they do look tasty, don't they? You only need a few ingredients and through the nuts these little energy balls fill you up and provide you with healthy fats. The basic ingredients are nuts and apricots. The apricots add the perfect fruity kick and the vanilla flavour gives the balls a pleasant, praline-like and sweet note.

Basically, these balls are similar to the many bars you get in drugstores, for example. However, you have the advantage that you know exactly what the ingredients are, that you prepare them with love and that you save a lot of plastic. For children these balls are also a great snack for the school break for example.

In the refrigerator the vanilla balls can be kept airtightly for a few days.

Duration 15+15 minutes
Ingredients for 15 balls
  • 90g dried unsulphured apricots
  • 70g cashew nuts
  • 150g almonds
  • 1 teaspoon vanilla extract or pulp of a vanilla pod
  • 10g lemon juice
  • 1 pinch of salt
  • shredded coconut¹
Preparation
  1. soak the apricots in hot water for at least 15 minutes
  2. drain the water from the apricots
  3. put all ingredients in a blender and mix until the desired consistency, if necessary add some water if the mixture is not sticky enough
  4. form into small balls and roll in coconut flakes
Remarks
¹ Alternatively, you can coat the balls with, for example, finely chopped nuts.
