Wholemeal Bread without Yeast
Basics

No yeast at hand because the Corona crisis is making trouble or because you forgot to buy it? No problem. This recipe works without yeast. It looks more like a cake because it is prepared with baking powder and oil. But don't worry - this wholemeal bread won't taste sweet in the end - it will be super delicious!

Duration 10 + 50-60 minutes
Ingredients for 1 bread
  • 350 Whole meal spelt flour¹
  • 300g wholemeal wheat flour¹
  • 120g seeds or kernels (here: 60g linseed, 60g sunflower seeds)
  • 650g water
  • 1 package baking powder
  • 70g vegetable oil (here: sunflower oil)
  • 2.5 teaspoonful of salt
  • Sesame seeds, grains, etc. to top
Preparation
  1. Grease a suitable loaf pan²* or line it with baking paper (a silicone pan does not need to be greased)
  2. (if you use flour instead of grains, you can skip this step) Grind grains in a high capacity mixer
  3. mix flour, salt and baking powder in a bowl
  4. add water, oil, grains and seeds and stir until a smooth dough is obtained (dough is quite liquid)
  5. pour the dough into a box and decorate with grains and seeds as desired
  6. Bake in a cold oven at 180°C circulating air for approx. 50-60 minutes³.
  7. remove the finished bread from the tin and let it cool completely on a cake rack, otherwise it will fall apart when cut
Remarks
¹ If you have a powerful food processor at home (mine has 800W), then you can also process whole spelt or rye grains into flour, so that more nutrients are available.
² I use a foldable silicone pan* with the dimensions 30 x 11 x 7 cm.
³ Tip: put a fireproof bowl with water in the oven so that the crust is nice and crispy.
