Mediterranean Couscous Salad

This mediterranean couscous salad is perfect for a delicious barbecue or a quick lunch on the road. It is quickly made, full of healthy ingredients, makes you feel repleted and tastes delicious!

Ingredients for 4 portions
  • 1 cup of couscous (here: 150g)
  • 2 cups of water (here: 480ml)
  • 150g rocket
  • 3 tablespoons of tomato paste
  • 200g smoked tofu¹
  • 2 peppers
  • 200g cherry tomatoes
  • juice of half a lemon
  • 2 tablespoons of olive oil
  • Salt, pepper, paprika noble sweet
Preparation
  1. wash the couscous, soak in hot water in a ratio of 1:2, add a little salt and tomato paste, swell and cool
  2. wash and cut the rocket, peppers and tomatoes
  3. cut smoked tofu into cubes
  4. add olive oil, lemon juice, pepper and paprika to the couscous and mix
  5. add remaining ingredients and mix together
Remarks
¹ Alternatively, you could take a pack of vegan feta cheese. This makes the salad taste very tasty!
