Fluffy Vanilla Pancakes

It's Pancake Sunday! Or Monday, Tuesday. Pancakes just always go, right? Right! This recipe is made really fast (I promise!) and tastes really good. You can even choose to make the dough sugar-free.
Duration 20 minutes
Ingredients for 6 pancakes
Base:
- 1 banana (here: 130g)
- 100g plant drink (here: almond drink)
- 100g flour (here: spelt flour 630)
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 1 teaspoon vanilla extract
- 1 pinch of salt
- 1 tablespoon vegetable oil
Optional:
- 2 tablespoons of sugar¹
Toppings:
- 150 vanilla soy yoghurt
- fruits or berries of your choice
Preparation
- mash banana in a bowl
- add flour, vegetable drink, baking powder, cinnamon, vanilla extract(, sugar) and salt and mix
- heat the oil in a coated pan
- spread about 3 tablespoons of the dough for 1 pancake in a round pan and fry on a low heat²
- optionally you can keep the pancakes warm in the oven
- Serve with vanilla soy yoghurt and fruits/berries
Remarks
¹ I have used panela sugar in this recipe. It brings in a delicious malty taste. Even with coconut blossom sugar this recipe tastes incredibly good. Or even completely without sugar, depending on how ripe your banana is.
² If you have a pan with a lid, you are welcome to use the lid. This is the best way for me to fry the pancake, because the pancake can also stick from above, i.e. on a low level the pancake will not burn you from below and from above it will go through.
